I leave the cinnamon sticks with the syrup until serving. Not only does it look pretty, but it keeps infusing cinnamon flavor.

Use different types of sugar. Brown sugar has a rich molasses and caramel flavor to it. It adds a lot of extra depth to your recipe.
If you don't have cinnamon sticks, you can use 2 teaspoons of ground cinnamon. No need to strain your syrup after cooking. Enjoy the pretty brown flecks!
