Cinnamon Dolce Flavored Syrup
Recently I co-host a baby shower for my sister-in-law. I was in charge of creating a coffee and tea bar for our guests and with the beginning of the fall season, I was super excited to make some of my favorite cinnamon and spice recipes.
My sister-in-law keeps to a strict, gluten and dairy-free diet, so to honor her we kept the entire menu void of those ingredients. It honestly wasn’t an issue.
For our tea bar, I made a pot of my super easy chai recipe which I whipped up minutes before everyone arrived using full fat, super creamy, oat milk.
I also decided on making several syrups that could flavor either tea or coffee and each person could choose their favorite. I wasn’t surprised but this cinnamon dolce syrup seemed to be a hit! Also, check out my rose syrup and liquid cane sugar.
If you’re curious what dolce means, it simply means sweet! This cinnamon syrup is definitely sweet, crazy easy to make, and takes your tea or coffee to the next level!
What is Cinnamon Dolce Syrup?
This is a simple syrup, but with cinnamon, and is perfect to add to drinks. You can now make your favorite coffee house drinks at home for a fraction of the cost!
Simple syrups have a 1:1 sugar-to-water ratio. I found that 2 Tablespoons per 8 oz cup is the perfect amount of sweetness for me. The beauty of making your own teas or coffee is that you can decide how little or how much sweetener you enjoy.
What Does Cinnamon Dolce Syrup Taste Like?
Honestly, this perfect drink sweetener tastes like fall. It tastes spicy and sweet!
Cinnamon
Cinnamon is a widely popular spice used to flavor sweet and savory dishes alike as well as drinks such as cocktails, teas, and coffee. A prized spice in ancient times, it was often reserved for royalty or religious practices.
Cinnamon is harvested from the inner bark of the tree. When it dries, it naturally rolls up to form the cinnamon sticks we purchase at the supermarket.
Cinnamon comes from the genus Cinnamomum. There are several varieties of cinnamon trees and grown over the world. Some say only Cinnamomum verum is the true cinnamon. This variety is native to Sri Lanka. This cinnamon can also be labeled Ceylon cinnamon.
Cinnamon is also grown in China, India, and South America. While there are many varieties of cinnamon, most are simply labeled only “cinnamon” for resale.
What is in Cinnamon Dolce Syrup
This recipe is only 3 ingredients. It is so simple to make, taking less than 10 minutes.
- Cinnamon – I use cinnamon sticks in this recipe. It doesn’t cloud the syrup and gives a wonderful natural flavor.
- Sugar – In this recipe, you can use any sugar, including brown sugar, but regular granulated table sugar is common and dissolves quickly and easily.
- Water – Not to be overlooked, water can play an important role in a recipe. Poor-tasting water can easily ruin the flavor. I like filtered water or spring water.
How to Make Cinnamon Dolce Syrup

Supplies:
Ingredients:
- Sugar
- Cinnamon
- Water
Instructions:
- Measure water and sugar into a saucepan.
- Turn the heat on low.
- Give the mixture a stir.
- Add in cinnamon sticks.
- Cook until sugar is fully dissolved in the water. Stirring occasionally. This should take around 5 minutes.
- Let the mixture steep on the stovetop (with lid) for 10 minutes.
- When cool enough to handle transfer to storage jar. (I like a good strong cinnamon flavor so I do not strain out the cinnamon sticks from my syrup.)
Recipe Tips and Notes
- I leave the cinnamon sticks with the syrup until serving. Not only does it look pretty, but it keeps infusing cinnamon flavor.
- Add a dash of vanilla for variation.
- Use different types of sugar. Brown sugar has a rich molasses and caramel flavor to it. It adds a lot of extra depth to your recipe.
- If you don’t have cinnamon sticks, you can use 2 teaspoons of ground cinnamon. No need to strain your syrup after cooking. Enjoy the pretty brown flecks!
- Use leftover cinnamon sticks to make cinnamon tea!
Storage
For proper storage, use a container with a tight lid. I prefer a syrup jar, but you can use a mason jar or whatever you have on hand.
Store in the refrigerator for up to 2 weeks. However, if you notice an off-color or smell, discard it and make a new recipe.
Don’t forget to label and date your container.
