Matcha is grown differently from other tea by creating shade over the leaves for the last two weeks before harvest. This short time causes the leaves to produce extra amino acids and chlorophyll which gives their leaves an extra bright color.
The tea leaves are steamed and baked before being ground into a very fine powder.
In matcha, the entire leaf is consumed which results in an extra nutrient-rich tea.
Matcha has an earthy herbaceous taste to it. When being prepared as a tea, it is whisked with simmering water and a bamboo whisk into a frothy tea.

Matcha is divided into two main grades, ceremonial and culinary. From there culinary can be divided out into even more categories. You can use any grade of matcha available to you for baking as long as it is reliably sourced.

Ingredients in Matcha Cookies
- Sugar – regular granulated cane sugar is best here. Too fine sugar can easily burn, and overly coarse sugar doesn’t combine and dissolve as quickly with the other ingredients.
- Brown Sugar – A light brown sugar is a good choice here.
- Butter – either salted or unsalted butter is fine. Best baking practices say to let the butter come to room temperature for best baking results.
- Flour – use all-purpose four.
- Baking Soda – baking soda is the rising agent in this recipe!
- Matcha Green Tea Powder – the star of the show!
- Eggs – organic eggs are my favorite. Use what you like best.
- Vanilla – use real vanilla for best taste.
- White Chocolate – white chocolate chips are my choice but you could also use chocolate chunks.
Matcha Cookie Recipe – How to Make Matcha Chocolate Chip Cookies
- In large mixing bowl, cream together sugar and butter.
- Measure in vanilla.
- Crack in eggs one at a time.
- In a separate bowl, mix together dry ingredients except matcha.
- Sift in matcha to dry ingredients.
- Slowly add dry ingredients with the wet ingredients.
- Mix only until wet and dry ingredients are totally combined.
- Fold in chocolate.
- Using a spatula scrape dough from the sides of the mixing bowl to create a ball in the center of the bowl. Cover with plastic wrap and refrigerate for 10-15 minutes.
- Scoop dough into even sized balls and place on prepared and greased cookie sheet.
- Bake at 375° for 10 minutes.
- Cool allow cookies to continue to bake on pan.
- Transfer to cool on a cooling rack.

Recipe Tips and Ideas
- Refrigerate your dough just to chill it. This allows your dough to rest and slightly stiffen for an easy scoop. This also helps the cookies keep their shape during baking.
- Use a cookie scoop or ice cream scoop to create consist size cookies. This allows for a perfectly even bake.
- Allow oven to fully preheat oven to correct baking temperature.
- Do not open and close oven during bake. Each time the oven is open it allows heat to escape causing an uneven bake for the front row of cookies.
- Let cookies continue to finish baking
Storing
- Store uneaten cookies in a Tupperware with lid at room temperature for up to one week. Note, they may last longer, but the chewy freshness will become a little stale.
- You can also freeze these cookies for up to three months. In a freezer safe container, layer each row of cookies with parchment paper. Don’t forget to label and date.
- You can store unused cookie dough in the freezer for up to two months if properly stored. First wrap dough in plastic wrap. Second place dough in either a freezer safe container with lid or in a freezer safe ziplock bag. Seal tightly.

Instructions

- Fold in chocolate.
- Using a spatula scrape dough from the sides of the mixing bowl to create a ball in the center of the bowl. Cover with plastic wrap and refrigerate for 10-15 minutes.
- Scoop dough into even-sized balls and place on prepared and greased cookie sheet.
- Bake at 375° for 10 minutes.
- Remove cookies from the oven and allow cookies to continue to bake on the pan.
- Transfer too cool on a cooling rack.
