What is Blue Matcha? Blue Matcha vs Green Matcha

Blue matcha and Green Matcha are not the same. While the green matcha that we are all familiar with is a true tea made from leaves of the plant Camellia Sinensis, blue matcha is made from an entirely different plant – the butterfly pea flower.
- Blue matcha is from the plant Clitoria ternate, commonly called butterfly pea flower. Blue Matcha is essentially dried butterfly pea flower powder. (Although it has other names such as Asian pigeonwings, Blue Tea Flowers, Butterfly Pea, and Blue Pea.) Butterfly Pea is a beautiful plant featuring bright blue vining flowers. Butterfly pea flowers are often dried and used to make a beautiful herbal tea. An interesting point for the butterfly pea flower is that it can change colors. The PH level changes when adding citrus and will cause it to turn purple. Blue matcha is made by drying butterfly pea flowers and then grounding them into a fine powder. Like green matcha, the entire flower is consumed instead of straining out the tea after steeping. It is caffeine-free and technically categorized as a tisane.
- Green Matcha as we discussed earlier is a true tea. What makes it different and special is the way the leaves are grown and prepared. Unlike most tea which only steeps tea leaves and discards them before drinking, matcha is finely ground tea leaves that are whisked with hot water and not strained out. The entire tea leaf is enjoyed in the tea. As a true tea, is contains caffeine and brings with it is’s own set of health benefits.

- Blue Matcha Powder – Choose a high-quality, organic, and food-grade blue matcha. Only a small amount is needed per cup so a little goes a long way!
- Water – Use filtered water or spring water.
- Honey – I like using honey as an all-natural sweetener. It brings out the natural floral flavor of blue matcha.
- Milk – Choose your favorite milk including plant-based based. Remember that any milk, especially nut milk can bring an extra flavor component. Keep this in mind when choosing your milk that this could alter your end result.
- Nutmeg – Nutmeg builds another layer to this latte.
- Vanilla Extract (optional)
