Lavender Honey Syrup

Infusing lavender with honey into a simple syrup just makes sense. I love the healthful and natural ingredients, beautiful colors, not to mention the light and lovely taste. I’ve made a lavender simple syrup using white sugar, and now I’m sharing my lavender honey syrup recipe with you. It is a lovely alternative for a naturally unrefined and sugar-free simple syrup.

Uses for Lavender Honey Syrup

Honey and lavender compliment each other so well and are wonderful in drinks ranging from tea and coffee to cocktails and even as a topping for pancakes or oatmeal. (I seriously just topped my kid’s oatmeal with this and they loved it!) it is no wonder it is so popular. 

Simple syrups are wonderful to use in beverages as the sugar, or in this case, honey, is already dissolved and with water and ready to mix into your drink. This especially is good for cold drinks such as iced or cold brew tea that it doesn’t mix as easily due to the temperature. 

Ingredients

Honey

You can use any type of honey including light, dark, processed, raw, and unfiltered. I prefer light honey such as clover honey in this recipe, as I think raw honey is a little overpowering.

Common Types of Honey For Simple Syrups

  • Clover honey – named for the flowers that the nector comes from, this is probably the most common honey in supermarkets and is wonderful to use in baking. It has a light color and mild flavor.
  • Orange Blossom – With this honey, the nector is mostly gathered from orange blossems hence the name. Some say they can actually taste a very light orange flavor. It is perfect to enjoy raw or by mixing with drinks, and drizzling on top of pancakes or oats.
  • Wildflower – This honey is made wide range of flower blossoms. With this honey, there will be quite a bit of difference in it’s flavor and color.

Lavender

Lavender is a beautiful edible flower that is used in both cooking and baking for wonderful light and herbaceous flavor. It tastes of floral and mint. Use a high-quality, culinary-grade lavender. A little can go a long way so be sure to use the correct amount and steep longer if you desire a stronger lavender taste.

Water

Water is an important element in simple syrup. I like to use filtered water from my Berkey filter. Spring water is also a good choice.

How to Make Lavender Honey Simple Syrup

Kitchen Tools

  • Small Saucepan
  • Measuring Cups and Spoons
  • Liquid Measuring Cup

Ingredients

  • Honey
  • Lavender
  • Filtered Water

Instructions

  1. In a small saucepan over low heat, pour in water, honey, and lavender.
  2. Stir gently until all the ingredients are incorporated.
  3. Turn off heat and cover.
  4. Allow syrup to steep for 10 minutes.
  5. Strain out lavender buds.
  6. Once mixture is cool, pour syrup into prepared storage containers.
  7. Enjoy!

Recipe Notes

  • Heating honey- In this recipe they honey will be lightly heated. If your honey has crystallized, not to worry as heating it will bring it back to its liquid form. If you are using raw honey, be aware that heating can result in some loss of nutrients and health benefits.
  • Lavender is a lovely light flavor if used correctly. Don’t use too much lavender or it will become bitter. A small amount goes a long way!
  • You can substitute by replacing half the amount of honey with sugar if desired.
  • Honey should not be given to children under the age of one year.

FAQ

Serving size – The amount of sweetener someone likes in their tea is so personal! In general, I suggest 2-4 Tablespoons per cup. This recipe makes about 16 Servings.

Storage

Store your lavender honey simple syrup in a sterilized glass jar with an airtight lid. I like using jars with clear glass so I can enjoy the color. Syrup bottles work well. Mason jars are also a good option.

Shelf Life

While honey has an indefinite shelf-life, adding other ingredients changes the dynamic. This recipe should be refrigerated and stored in an air-tight container in the refrigerator for up to 1 month.

Dietary Considerations

This recipe is naturally gluten, dairy, and refined sugar-free.

      I love honey syrup. but haven’t done lavender honey. I will have to try it with lighter lavender. I like a little bit, but too much tastes a little soapy to me.

      Preferring the health benefits of raw honey over simple sugars that spike the blood-sugar level, I was delighted to come across this easy Honey Lavender Syrup recipe! I doubled the amount of lavender in the recipe, and it turned out perfect! As I sip my iced Lavender London Fog, I’m already thinking of all the drinks I can make with this…love it so much!
