Homemade Lavender Syrup

Making your own syrup is not only easy but fun and extremely economical. It only costs a few cents to make an entire batch of syrup. It can be used in a wide range of recipes and drinks. Another perk is that you can adjust the recipe to make greater or fewer quantities depending upon your needs.

What is Lavender?

Lavender is a lovely purple flower that is part of the mint family. Many people use lavender to beautify their landscapes as it adds a nice pop of color as well as a wonderful aroma.

Lavender also contains many health benefits. Many use it as a natural alternative to improve minor health issues. Some studies say it may help improve sleep, treat skin issues, work as a natural pain reliever, and even promote hair growth! You can find more information here.

Another use for lavender is in food! It can be used fresh or dried (be sure to only use culinary grade) in anything from salads to syrups.

Lavender for Tea, Cooking, and Baking

Wondering what lavender to use in cooking and baking?

Any culinary-grade lavender is safe to use. English lavender (lavandula angustifolia) is said to be the sweetest and best for baking. 

What is Lavender Syrup Good for? Uses for Lavender Syrup

This syrup is pretty versatile. While I mainly add it to tea, it can also be used to flavor lattes, coffee, and cocktails. Other uses to include this syrup are on top of pancakes or make your own lavender milk steamer.

  • Sweet
  • Floral
  • Herbaceous
  • Light

What is Lavender Syrup Made of?

There are only 3 ingredients in lavender syrup, making it amazingly simple to make at home!

  • Lavender Petals – use culinary grade lavender!
  • Sugar – any type of sugar works great in the recipe, however I used regular grandulated table sugar.
  • Water – filtered or spring water is best.

How Long Does Lavender Simple Syrup Last?

This syrup can stay fresh for up to 4 weeks if stored properly in the refrigerator. If your syrup starts to smell rancid or developed an off-color, that is a good indication that it should be immediately discarded.

How to Store Lavender Syrup

After your syrup is completely cool, transfer it to an airtight storage jar. I like to use 8.5 oz glass jars with swing tops for easy use. A canning jar or any other airtight container will work. 

Store in the refrigerator for up to 4 weeks. 

Why Isn’t My Syrup Purple?

Your syrup will not automatically be a beautiful lavender color. The natural lavender syrup will often be a light or deep tan color. A slightly more purple color will develop if you are using especially dark blue buds. While your natural syrup won’t be purple it will still taste of lavender.

How to Get a Purple Color in the Best Lavender Syrup?

If you are wanting to create a lavender-colored syrup you can use a variation of food-grade dyes to make a lavender color. Colored syrup looks especially beautiful in cocktails.

How to Make Lavender Syrup

  • Measure Ingredients – just measure all the ingredients straight into the pot. No particular order is required.
  • Stir – give the mixture a stir to combine all the ingredients.
  • Cook – over low heat, allow the sugar to fully dissolve, stirring occasionally to avoid burning. This should only take a few minutes.
  • Steep – turn off heat and cover pot. Allow syrup to steep for 5-10 minutes. This allows the lavender to release all its wonderful flavors.
  • Cool – cool completely and strain out the lavender.
  • Use or Store – Use lavender syrup immediately or store it in an airtight container in the refrigerator for up to 4 weeks.

Kitchen Tools

  • Small Pot
  • Liquid Measuring Cup
  • Table Spoon
  • Stirring Spoon

Ingredients

  • 1 Cup Sugar
  • 1 Cup Water
  • 2 Tablespoons Lavender Petals

Instructions

  1. Measure ingredients into pot over low heat.
  2. Stir occasionally until sugar fully dissolves.
  3. Turn off heat and cover.
  4. Steep for 5-10 minutes.
  5. Strain out lavender.
  6. Use immediately or store in airtight container.

Recipe Notes:

  • Watch syrup while it is on the stove. It only takes a few minutes for the sugar to fully dissolve. Sugar can also burn if left unattended.
  • Feel free to experiment using more lavender petals.
  • Leave lavender in syrup longer to create a stronger flavor. Up to 10 minutes.
  • This syrup won’t naturally be a purple color. If you are wanting a beautiful purple color, try adding a drop of food coloring.

Variations

  • Lavender can be fun to experiment with. Try different lavender petals or buds grown from different regions to see which ones you like best! 
  • Use different sugars.
  • Make it refined sugar-free by substituting it with honey.

Honey Lavender Syrup 

Wondering if it is possible to make lavender syrup sugar-free?? The answer is absolutely! While this won’t be totally calorie-free, you can make a refined sugar-free simple syrup with honey. Just use substitute honey for sugar and continue to follow the recipe. Lavender honey simple syrup can be used just like standard lavender syrup. 

Lavender Syrup for Cocktails

You can use this lavender syrup in more than just tea. Try it with your favorite cocktail!

        It is best practice to store homemade simple syrup in the refrigerator. It also keeps it safe from any bacteria.
